Xanthaangom is een bindmiddel en zorgt ervoor dat een vloeistof of baksel dikker wordt en/of niet uit elkaar valt.Tarwegluten is een deel van de tarwekorrel met een laag koolhydraatgehalte en veel eiwitten. Gluten zorgen voor de elasticiteit en luchtigheid in een brood. Door gluten te kneden door bijv. sojameel of lupinemeel vorm je glutennetwerken door het meel, waardoor je echt de broodstructuur. Als je dit zou weglaten, dan bindt het brood niet. Je kunt xanthaangom niet vervangen door gluten of andersom. Beide ingrediënten hebben echt een eigen unieke werking. We voegen veel tarwegluten toe aan brood, omdat het laag is in koolhydraten en dus nodig is om die broodstructuur na te bootsen.]]></description>

Net als no-knead-bread heb ik het gebakken in m&#039;n le Creuset, een half uur met deksel en dan nog 12 minuten zonder deksel. Diana ik weet niet of je nog kijkt op deze site maar ik wil even reageren waarom nu ik heb zelf de eerste keer met dit brood ook de fout gemaakt door gewoon bakpoeder te gebruiken dan rijst het niet en meestal zit er bij de KH arme broden ook bij zijn heerlijke notenbrood gewoon bakpoeder maar
er moet dus GIST in ipv daarom was het bij mij ook niet gerezen!! Foutje maar nu heerlijk hoor

Zeker! De tarwegluten, sojameel, tarwezemelen, tarwemeel en water. Ik zou 1,5 keer meer gist gebruiken en de hoeveelheid zout gelijk laten.
